When we started producing gin, we decided that our gin would be a single malt gin - meaning it would be made from 100% malted barley, just like our whisky. We add a lot of juniper and origanum syriacum (zaa'tar), lemon peel, orange, chamomile, verbena, cinnamon, and black pepper, and infuse the selected spices for 48 hours. Then we distill the gin for the third time, and that's how we produce all four of our gin types: Levantine Gin, Oak Aged Gin, Peated Gin, and Navy Strength Gin. Our gin starts the same as our single malt series – 100% pure malted barley mashed in-house and distilled. Then we add a heap of Juniper and botanicals, hand-sourced from Tel Aviv’s spice market: origanum syriacum (zaa’tar), lemon peel, orange, chamomile, verbena, cinnamon, and black pepper.

We age our Levantine Gin in red wine STR casks for a few months. The oak aged Gin reveals a subtle vanilla flavor, combined with lemon and juniper.

Our Peated Levantine gin is a unique gin that is characterized by its distinct smoky flavor. This gin is made using the same botanicals as our Levantine gin and aged in ex-Islay casks from Scotland.

Inspired by the magical Tel Aviv coastline and the ancient port city of Jaffa, we created the Navy Strength Levantine Gin in appreciation of our local history. Strong presence of fresh juniper and lemon, complemented by the naturally sweet and velvety character of our single malt new make.
