A special herb liqueur that was crafted in honor of Israel’s 70th anniversary, symbolizing the Israeli essence and roots. Seven known people from diverse cultural and professional fields, individuals who are revolutionary, creative, daring entrepreneurs, were asked to choose a unique herb, root or spice that represents the essence of Israel for them: Almonds, Savory, Coriander, Jasmine, Tarragon, Thyme and Cardamom. This limited edition Young Single malt crafted for Orphaned Land, an Israeli heavy metal band, is a blend of three casks: Ex-Bourbon, Ex-Islay and Virgin Oak.
Aged between 12-18 months, the spirit has a complex but gentle flavor, with a lightly peated finish.

A delicate smell of Sulfury peat smoke, fresh lemon and malt, followed by light woody smell.
Medium body, the delicate peat taste is felt straight together with a citrus flavors on the tongue, with sweet vanilla, honey and dried Fruit notes.
Very long, almost not dissapears. The peat taste lingers in the mouth for a while with the woody notes, followed by light black pepper spiciness.
The Milk & Honey Distillery's second edition whisky is the newest addition to our experimental series, that made history with Israel's first ever single-malt whisky in June 2017.
This whisky was crafted from lightly peated malt, made in-house and matured for 32 months in new American oak barrel, before being transferred to an ex-bourbon barrel for additional 11 months, bottled at a perfect timing.
Distillation of the cask was carried out in a small pot still in a warehouse in the Sharon region by head distiller Tomer Goren, accompanied by the late Dr. Jim Swan, an international master distiller, in his role as a consultant to the distillery at the time.

New Make is the clear spirit flowing from our pot still, that after a few years of barrel aging becomes whisky. While the wood and the aging process are responsible for most of the final product characteristics, the New Make is the basis of every whisky - it allows us to taste and feel the beginning of a great single malt whisky and its malt and yeast flavors.
Our Single Malt New Make is double-distilled 100% malted barley and bottled at 50% abv./100 proof.
This is a delicate, smooth spirit, which is still complex and flavorful, despite its young age.

Our gin starts the same as our single malt series – 100% pure malted barley that’s mashed in-house and distilled in our pot still. Then we add a heap of Juniper and botanicals, hand-sourced from Tel Aviv's Levinsky market: hyssop, lemon peel, orange, chamomile, verbena, cinnamon, and black pepper. We then let the botanicals rest in the still for 48 hours and then distill for the third time in our 250L pot still, for extra smoothness. 46% abv./92 proof.

Levantine Gin is a fantastic base for a classic martini or G&T, and any cocktail that calls for a flavorful, higher-proof, no-nonsense juniper-based spirit.
We let our Levantine Gin rest in red wine barrels for a few months in our distillery cask room, not far from the Mediterranean beach. 500ml, 46% abv.

THE CASK SERIES
The Cask Series gives you the opportunity to be a part of our journey towards creating the first Israeli single malt whisky.
Each of the editions in our Cask Series is a young single malt spirit that has been aged for a short period of time – from several months and, in the future, up to three years, meaning it is not yet whisky. The editions in the Cask Series are the link between our New Make and our single malt whisky that is currently maturing and will first be bottled in 2019.
The series includes limited, numbered editions. This is your opportunity to join us on our journey and be part of our spirit’s aging process.
This special edition of the Young Single Malt series is our last before our commercial single malt whisky debut.
It is a preview for our classic whisky, with characteristics that will reflect our future single malt.
This young double cask: ex- red wine (STR) and ex- bourbon, aged for only 12 months, tells our unique story of time, climate, wood and fine ingredients.

Medium body, sweet flavors of vanilla and honey predominate at first, accompanied by sweet flavors of dried fruit.

An edition of 1,451 bottles that is the direct, advanced continuation of the previous edition in the series: Triple Cask, a blend of three casks – an ex-bourbon barrel and two ex-red wine casks at different levels of charring, balancing and refining the different flavors. One of the casks was finished for a few months in a barrel that previously used to mature peated whisky from the island of Islay in Scotland, providing an additional layer of slight peatiness , and a complexity to the distillate.
A delicate peatiness together with a malty sweetness, oak, followed by the sweetness of dried fruit and honey.
Light-bodied, notes of peaty smoke predominate at first, accompanied by the sweet taste of dried fruit and honey.

This is the first version in the Cask Series that is actually a blend of two different casks and illustrates the Importance of blending, which ensures that each of the barrels contributes its advantages and also allows it to integrate with the other flavors, taking the series to the next level on its journey. This spirit also has a sweetness that is typical when again in X-Bourbon barrels as well as the characteristic woody tones from aging in new oak barrels. They all come together to create a delicate, accessible and incredibly balanced spirit that feels and tastes mature to its age. 46%abv

An edition of 492 bottles of young single malt aged for 12 months in an X-Bourbon barrel. This is a light yellow-colored, medium-bodied spirit, sweet and balanced, with a light spiciness at the end. Barrels previous used for aging bourbon generally impart a clear sweetness to whisky aged in them.
Sweet Maltiness, followed by soft oak notes, vanilla and caramel.
Medium boddied, The maltiness stayes with vanilla, honey and toffee flavours.
Short finish. The oak notes last long.
An edition of only 155 bottles of single malt spirit that aged in a new American oak barrel for 6 months. It is a straw-colored spirit. You can feel the good and interesting influence of the American oak barrel, such as the woody taste along with sweet caramel and honey.

This is a copper-colored, full-bodied spirit, which aside from being accessible and delicate, has a long bittersweet chocolate finish with hints of dried fruit that are typical of aging in red wine casks.
Distinctive malty aroma with notes of honey. The wine barrel influence is apparent but the New Make character still dominates.

Then we add a heap of Juniper and botanicals, hand-sourced from Levinsky market: Za’atar, cinnamon, orange, chamomile, black pepper, lemon peel aloysia citrodora . We then let the botanicals rest in the still for 24 hours and then distill it for the third time in our Gin-Genie 250L pot still, for extra smoothness. 46% abv
